3/4cupextra-virgin olive oil
1/4cupred wine vinegar
1tspDijon mustard
1/2tspdried oregano
1/2tspkosher salt
1/2tspfreshly ground black pepper
Italian Pasta Salad
1cupcooked rotini pastacooled
4.5ozbaby arugula
8ozmozzarella pearls
4ozprovolonecubed
6ozsalamisliced
1pintgrape tomatoeshalved
1/2cupsliced red onion
7ozKalamata olives
1/4cupchopped fresh parsley
1/4 cupchopped fresh basil
1/2cupCreamy Italian Dressing
Instructions
Creamy Italian Dressing
In a small bowl, combine the olive oil, vinegar, mustard, oregano, salt, and pepper until emulsified. Store in an airtight container in the fridge for up to 2 weeks.
Italian Pasta Salad
In a large bowl, toss the cooled rotini with the olive oil and salt. Add the arugula, mozzarella, provolone, salami, tomatoes, onion, olives, parsley, and basil and toss until evenly distributed.
Pour on the Creamy Italian Dressing and toss until coated.
