Add the maple syrup, yogurt, and granola to individual bowls (i like to use a vessel with a spout for the syrup, but it’s not necessary!). Garnish the yogurt with lemon zest, if using. Space the bowls out on the board to anchor it.
Add apple hearts to the center of the board, then surround with blueberries. Add the strawberries, blackberries, raspberries, and cookies to the board in separate sections, making sure to leave spaces on the edge for the warm pancakes.
Fill in any empty spaces (aside from the pancake spots!) with chocolates and pomegranate seeds, being sure to keep the chocolate away from where the pancakes will go to avoid melting. Garnish with mint.
Add the hot pancakes to the board and top with butter if using. Serve immediately!
