Beer Cheese Dip

- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/2 tsp mustard powder
- 1/4 tsp Worcestershire sauce
- 1/8 tsp kosher salt
- 1 cup beer of your choice, room temperature
- 3/4 cup whole milk, room temperature
- 2 cups grated sharp cheddar cheese
- 1 cup (about 3 ounces) grated Gruyère cheese
- Pretzels, for serving
Melt the butter in a medium saucepan set over medium–low heat. Add the flour and whisk constantly until it forms a thick paste, about 1 minute.
Stir in the garlic powder, onion powder, mustard powder, Worcestershire sauce, and salt; cook for 30 seconds. Add the milk and beer and whisk until smooth. Cook, whisking often, until the mixture is thickened and a few bubbles break across the surface, 5 to 7 minutes.
Add about 1/3 of the cheddar and Gruyère cheeses; whisk until melted and fully incorporated, 1 to 2 minutes. Working in batches, repeat with the remaining cheese, whisking constantly until the mixture is thickened and creamy, about 5 minutes total Let cool slightly before serving.
Serve in a bowl with pretzels on the side for dipping.
