Add the honey, olives, and almonds to separate small bowls or ramekins and place them in the center of the board to anchor it.
Place the prepared cheeses around the outside edge of the board. Fan out the chocolate and a handful of crackers around the bowls.
Add the dried apricots, raspberries, and grapes throughout the board, paying attention to color placement.
Tuck the salami, Capocollo, and Calabrese into any remaining spaces around the ramekins and produce sections.
Garnish with rosemary and serve with the crackers on the side.
