Avocado Goat Cheese Dip

Make this savory avocado goat cheese dip with crispy prosciutto as an appetizer.

Ingredients

  • 2 slices prosciutto
  • 1 avocado seeded, peeled, and cubed
  • 4 oz plain goat cheese
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh parsley
  • 2 tbsp white balsamic vinegar
  • 1/8 tsp sea salt or to taste
  • 1/8 tsp freshly ground black pepper or to taste

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Add the prosciutto to the prepared sheet. Cover with another sheet of parchment paper and a second baking sheet. Roast until crispy, 15 to 20 minutes, being careful not to overcook. Remove from the oven and let cool.
  • In the base of a food processor, combine the avocado, goat cheese, chives, basil, parsley, vinegar, salt, and pepper. Pulse until combined and smooth, scraping down sides as needed. (Blend less for a chunkier texture!)
  • Transfer the dip to a serving bowl and crumble crispy prosciutto on top.
