antipasto skewer

The only thing better than caprese salad are these fruity, build-your-own versions! Just add melon, prosciutto, and, of course, mozzarella to a skewer, and voila! You have the perfect snack, app, or side for a picnic, backyard barbecue, or really anything. Plus this board is ideal for summer–it’s cute and doesn’t require any cooking. Pro tip: display a few already-assembled skewers to highlight some favorite combos, then let guests build their own–just like we did for my Antipasto Skewer Board!

How to Serve These Melon Prosciutto Skewers

Cheese

  • Mozzarella Balls (aka Bocconcini)
  • Lamb Chopper, sliced

Meat

  • Prosciutto

Dip

  • Balsamic glaze

Produce

  • Cantaloupe, balled
  • Honeydew, balled
  • Watermelon, balled
  • Blackberries

Garnish

  • Basil
  • Mint

Put It All Together

  • Add the balsamic glaze to a small bowl or ramekin and place in the center of the board to anchor it. Place any pre-made skewers on the opposite side of the board (or add to a separate serving platter to save room).
  • Pile prosciutto next to the bowl, then add mozzarella balls around the rest of the bowl. Fan Lamb Chopper in empty spaces around the edge of the board.
  • Add melon balls and blackberries to the board in separate sections. Garnish with mint and basil.
  • Lay out skewers for your guests to build their own (I love these skewers because they come in different sizes and colors).

Note: To avoid a sticky mess, drain the melon balls in a colander before adding them to the board. You’ll thank me later!

How To Ball Melon

I got my hands on a proper melon baller a few years back and it’s one of the most fun kitchen items to use. I love this set because it also comes with a carving tool to create jagged lines in melon rinds to beautifully serve your fruit salad. See photos in the link

Watermelon

Cut ends off, then slice in half crosswise. Use a melon baller or cookie dough baller and scoop out as many balls as you can.

Cantaloupe & Honeydew

Cut in half lengthwise. Remove seeds and pulp from the center, then use a melon baller or cookie dough baller to scoop out as many balls as you can.

What is a Caprese?

Born on the beautiful Italian island of Capri, this uber fresh insalata (read: salad) is a summer classic. It’s a combination of juicy red tomatoes, creamy mozzarella cheese, and fresh green basil (hello, Italian flag!) and drizzled with olive oil. Though balsamic vinegar (or glaze!) is not a traditional addition, it’s a delicious one!

Caprese is usually served in layered slices (i.e. tomato, mozzarella, basil, repeat), but some use mozzarella balls and cherry tomatoes for a more party-friendly serving method. Speaking of breaking from tradition… as much as I love a classic caprese, I love adding melons to mine–here I’ve actually substituted melon for tomatoes for a less acidic bite, but feel free to keep them if you love tomatoes!
