When it comes to hosting, it truly does not get easier (or tastier!) than Velveeta and Rotel cheese dip. Game night, Taco Tuesday, or just wanting a delicious cheesy starter–any occasion is an excellent reason to whip up this crockpot queso dip! All you have to do is brown the beef, then throw everything into a slow cooker an hour and a half before serving.

Rotel Dip Recipe

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 2 teaspoons taco seasoning
  • 16 ounces Velveeta cheese, cubed
  • 1 (10-ounce) can Rotel Original
  • Tortilla chips, for serving

How To Make Rotel Cheese Dip In Crock Pot

  • Heat the oil in a large skillet over medium-high heat. Add the beef and cook, breaking up into pieces, until browned and cooked through, about 10 minutes. Stir in the taco seasoning.
  • To the bowl of a slow cooker, add the browned beef, Velveeta, and Rotel; cook on low, stirring once or twice, until melted and combined, 90 minutes.
  • Serve dip warm with tortilla chips on the side.
