You read that right…whipped brie is a thing and it’s delicious! Don’t believe me? Chef Thomas Keller serves whipped brie at his renowned Michelin star-rated restaurant The French Laundry. Chef Keller’s recipe is undeniably gourmet: He uses Brie de Meux and tops it with a port and fig compote and fleur de sel (which is fancy, flaky sea salt). I went the quicker and easier route so you can enjoy at home! The best part is that you can make it sweet or savory—I opted for mostly sweet with my honey-rosemary and blueberry jam-thyme combos. And, while it’s true you can find brie spreads in stores, nothing compares to this light and fluffy air whipped texture.

How To Whip Brie & Honey
Ingredients
- 2-3 (8-ounce) brie wheels, cold
- Honey, for serving
- Honey comb, for serving (optional)
- Fresh rosemary sprigs, for serving (optional)
- Crackers, for serving
Directions
- Cut the rind off the Brie (save for another use if you like) and cut brie into cubes. Let brie come to room temperature.
- Add brie to the base of a food processor and pulse until smooth and creamy, about 5 minutes, scraping down the sides as needed. Transfer to a serving plate or bowl.
- Top whipped brie with honey comb, if using, and drizzle with honey. Garnish with rosemary and serve with crackers on the side. (Alternatively, try using blueberry jam instead of honey and garnish with fresh thyme!)
Pro tip: the colder the brie, the easier it is to cut of the rind! But then be sure to bring to room temp before whipping
Make Whipped Brie in a Stand Mixer
When you use a stand mixer, you’ll need no less than three 8-ounce brie wheels! Any less and it won’t get airy enough to really be “whipped.” Add the brie to the bowl of a stand mixer. Using the paddle attachment, beat on medium speed until very light and creamy, about 10 minutes.

No Crackers? No Problem!
