Cranberry Brie Bites

Cranberry brie bites might just be the easiest  appetizer I’ve ever made–all you need is three ingredients, 10 minutes, and some hungry people to please. This is my take on baked brie in puff pastry and let me tell you, these phyllo cups are a game changer. Instead of cutting up pieces of puff pastry and waiting for them to bake, the pre-made phyllo shells put you way ahead of the game. 

The cranberry sauce is tart and sweet and perfectly complements the creaminess of the brie, but I especially love cranberry because it adds festive fun during the holidays! That being said, feel free to swap in your favorite jam (like fig or blackberry) if cranberry is not your thing. And switch it up per season. These would be great with blueberry jam and mint in the summer too.

Cranberry Brie Bites Recipe

Makes 15

Ingredients

  • 1 1.9 ounce package phyllo cups
  • 2-3 ounces brie, cut into 3/4-inch cubes
  • 1/2 cup whole berry cranberry sauce

Directions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. 
  • Place the phyllo cups on the prepared sheet about 1 inch apart. Add one brie cube to each cup. Bake for 5-8 minutes, or until the cheese is melted and bubbling slightly.
  • Remove from the oven and transfer to a serving platter. Top each cup with about 1 teaspoon cranberry sauce.

Can’t Find Phyllo?

If you are struggling to find phyllo cups at your store, or just prefer something different, try using puff pastry shells! You can also use crescent rolls. For those, you would wrap the brie and sauce inside the dough and bake at 375°F for 18-20 minutes. Almost as easy as the pre-made phyllo shells!

Baked Brie & Cranberry Bites

  • 1 1.9-oz package phyllo cups
