Manchego is a crowd-pleaser and a mainstay on cheese boards around the world, but if you really want it to shine, complement it with Idiazabal & Mahón cheeses, and other Spanish delights to create a tapas-style spread. I like to pair this board with Spanish rioja to match the creamy Manchego and complement the fatty chorizo, briny Spanish olives, and salty Marcona almonds.

Spanish Tapas Platter
Cheese
- Idiazabal, sliced into triangles
- Mahón, sliced
- Manchego, sliced into triangles
- Drunken goat, sliced into triangles
Meat
- Chorizo, sliced
- Serrano ham, sliced
Produce
- Clementines, segmented
- Green grapes
Accouterments
- Dried orange slices
- Aloreña olives
- Pimentos, chopped
- Marcona almonds
- Quince paste, cubed

Directions
- Add the olives, pimentos, and almonds to separate small bowls and add them to the center of a board.
- Add the clementine segments around one side of the bowls and serrano ham around the other side. Add the cheeses in separate sections around the edge of the board. Fill in any remaining spaces with chorizo and grapes.
- Garnish with dried orange slices.

Rioja, a mostly tempranillo-based red blend from northern Spain, has cherry, plum, and leather tasting notes. Pro tip: The rioja crianza level (aged for two years) is a solid value pick, but you can splurge for the rioja reserva level (aged three years) for not much more.
For white wine drinkers, try a citrusy albariño or txakoli, a lightly sparkling Spanish wine
