This easy beer cheese dip is America’s answer to Fondue: it’s melty, delicious, and makes just about anything taste better. My easy warm beer cheese recipe is made with cheddar, Gruyère, and, yes, beer, and is best served with warm soft pretzels on the side. Best of all, I make the entire dip in one saucepan and it goes from stovetop to table in just 15 minutes.

I love using a combination of cheddar and Gruyère cheeses because you really achieve the perfect balance of sharp, nutty flavors and a perfectly melty texture. 

As for the beer, feel free to use your favorite variety for drinking, but I prefer a lager or pilsner because it adds flavor without overpowering the cheese. 

This crowd-pleasing dip is perfect as a snack and/or appetizer for fall festivities such as an Oktoberfest, a tailgate, or game day at home. Pair it with my Crudite Platter, Pretzel Board, Meatball Board, BBQ Chicken Board, or Salami Chips.

What Is Beer Cheese?

Beer cheese is exactly what it sounds like: a delicious combination of cheese and beer! Not to be confused with pub cheese (a cheese spread that may or may not contain beer), beer cheese can be served cold and spreadable or warm and melty, like my beer cheese dip recipe.

My version combines sharp cheddar and nutty Gruyère with beer, milk, and a few savory seasonings for a creamy, dippable cheese sauce. And while cold beer cheese has its fans, I’m firmly on team warm, especially when there are soft pretzels involved. Hello, ooey gooey cheese pulls!

The beer adds another layer of flavor and brings out the savory, umami notes in the cheese. I prefer a lager or pilsner for a balanced beer flavor that doesn’t overpower the cheese, but you can absolutely experiment with your favorite brew.

Beer Cheese vs. Pub Cheese

The two key differences between beer cheese and pub cheese are the ingredients and the serving temperature. Beer cheese is traditionally made with beer and served warm, whereas pub cheese may or may not contain beer and can be served cold or at room temperature.

Beer Cheese Ingredients

Check your pantry and grab a shopping cart! Here are the ingredients you need to make this easy beer cheese dip recipe:

  • Unsalted butter: The butter adds a rich flavor and helps to thicken the sauce.
  • All-purpose flour: This helps to thicken the pretzel dip. Whisk the flour with the butter to form a roux before adding the other ingredients.
  • Garlic powder: This adds a savory flavor to the dip, though it isn’t as sharp as raw garlic (plus it blends in seamlessly!). 
  • Onion powder: Much like garlic powder, this pantry staple gives the dip a concentrated savory flavor.
  • Mustard powder: Like real mustard, this dried powder adds a slightly spicy, sharp heat to the beer cheese dip.
  • Worcestershire sauce: It delivers a round, umami-rich flavor. 
  • Kosher salt: A little bit of salt helps to enhance the flavor of all the other ingredients. I use Diamond Crystal kosher salt; if you use any other brand, start with half the amount that I call for and add more to taste, if needed.
  • Beer: What is pretzel dip without beer? I recommend a light- to medium-bodied beer such as a lager or pilsner, but any variety will work!
  • Whole milk: For the creamiest pretzel cheese dip, use whole milk, which will give the dip its body. You can use 2% or skim if that’s what you have in your fridge, but know that your dip might not be as thick. 
  • Sharp cheddar cheese: Stick to a creamy block of cheddar cheese. For this recipe, I like Tillamook and Cabot Extra Sharp (blue label).
  • Gruyère cheese: I love the nutty, salty flavor that it adds.
  • Soft pretzels: What is beer cheese dip without soft pretzels? I like Super Pretzel Soft Pretzels, which you can find at various grocery stores, including Target, or Eastern Provisions. I fell in love with them when making this soft pretzel charcuterie board and needed to find a big soft pretzel.

Best Cheeses for Beer Cheese

  • Sharp cheddar: I love the creamy, rich flavor of cheddar cheese as the base for this dip.
  • Gruyère: To add nutty, slightly salty notes to this dip, I like to incorporate some Gruyère cheese.  
  • Why the combination works: The melty sharp cheddar and nutty, slightly funky Gruyère makes for a super flavorful beer cheese dip with a perfectly dippable consistency.
  • Freshly grated vs. pre-shredded cheese: For the best consistency for this dip, grate a large block of cheese by hand on a box grater.
  • Any tested cheese substitutions: I haven’t made this dip with other types of cheese, but I think a creamy Dutch gouda could work in place of the cheddar. An alpine-style cheese including Swiss could be substituted in place of the Gruyère.

What Is the Best Beer for Beer Cheese?

Traditionally, beer cheese was made with leftover, flat beer (waste not, want not!), but nowadays you can make it with your favorite style. For a milder flavor, go with a lager or pilsner-style (like I did!). If you love hoppy flavor, go with your favorite IPA! Feeling seasonal? Try a pumpkin ale. There really is no right or wrong beer … just be aware that the stronger the beer, the more you’ll taste it! Here are some other varieties that work well:

  • Amber ale
  • Pale ales and IPA
  • Dark beers like stouts and porters 
  • Non-alcoholic beer

How To Make Beer Cheese

This recipe for beer cheese dip happens all in one pot on the stovetop. Make a roux with butter and flour, then add some seasonings, milk, beer, and cheese until the dip becomes thick and creamy.

Beer Cheese Dip Step-by-Step Instructions

  1. In a medium saucepan, melt the butter over medium-low heat.
  2. Add the flour and whisk constantly until it forms a thick paste, about 1 minute. Stir in garlic powder, onion powder, mustard powder, Worcestershire sauce, and salt.
  1. Add the milk and beer and whisk until smooth
  2. Add about 1/3 of the cheddar and Gruyère cheeses; whisk until melted and fully incorporated, 1 to 2 minutes. Working in batches, repeat with the remaining cheese, whisking constantly until the mixture is thickened and creamy.
  1. Serve in a bowl with warm soft pretzels on the side for dipping.
  2. Dig in.

Make the Roux

In a medium saucepan set over low heat, whisk together melted butter and flour until they form a thick paste.

Add the Beer, Milk & Seasonings

Whisk in the garlic powder, onion powder, mustard powder, and Worcestershire sauce, and salt until the mixture smells fragrant. Add the milk and beer and whisk until smooth. Cook low and slow until the mixture is thick and creamy. 

Add the Cheese

Reduce the heat and slowly add a mix of grated sharp cheddar and Gruyère cheeses, whisking constantly, until they’re completely melted.

How to Make Beer Cheese Dip Smooth and Creamy 

The first time I made this recipe, I made a couple of mistakes, which resulted in a dip that was too thick and gritty. I made a few tweaks and found that the following tips help create a smooth pretzel cheese dip every time: 

  • Grate cheese from the block: Pre-shredded cheese is coated with anti-caking agents, which means that the cheese doesn’t melt as easily and will result in a slightly stringy dip. For the smoothest, creamiest pretzel cheese dip, grate blocks of cheddar and Gruyère cheeses by hand on the largest side of a box grader. 
  • Add cheese gradually: Don’t add the cheese all at once! Add in about 1/3 of the total amount of shredded cheese at a time, whisking thoroughly and allowing the cheese to melt fully before adding more. 
  • Avoid excessive heat: The trick to making a smooth and creamy beer cheese dip is cooking the dip over low heat to allow the cheese to slowly melt. 
  • What to do if it’s too thick: If your dip is too thick, whisk in 1 tablespoon warm milk at a time until you reach your desired consistency. 
  • What to do if it’s too thin: If your dip is too thin, you can add a little more flour and butter. Mix together 1 tablespoon melted butter and 1 tablespoon flour, then whisk it into the dip and allow it to cook for a couple of minutes. Repeat this until you reach your desired consistency. 
  • Why beer cheese can become grainy: If you cook the dip over high heat, it will quickly become grainy since the proteins in the cheese break down more quickly than the fat.

How to Store and Reheat Beer Cheese Dip

Pretzel cheese beer dip is such a good party appetizer, so here’s what you need to know about making it in advance of hosting.

Can You Make Beer Cheese Ahead of Time?

Yes, you can make beer cheese ahead of time! Store it in an airtight container in the refrigerator up to three days before party time. 

Can You Reheat Beer Cheese Dip?

Yes, you can reheat beer cheese dip. The best way to do this is in a saucepan set over low heat. Whisk the dip constantly to prevent it from scorching and add a splash of milk or beer as needed to get it back to a smooth and creamy consistency. 

Can You Freeze Beer Cheese Dip?

Although it’s technically safe to freeze beer cheese dip, I don’t recommend it. The dairy in the milk and cheese will separate and get lumpy once it’s frozen and thawed, so it’s best to eat the dip fresh.

Does beer cheese have alcohol in it?

Yes, beer cheese is made with beer but most of the alcohol cooks off as you make the dip on the stovetop. Because the whole dip is made with just one cup of beer, it’s not enough to cause intoxication.

Can you make beer cheese without beer?

I haven’t made this recipe without beer, but you could try it with hard cider, ginger ale, chicken stock, or vegetable stock!

Is beer cheese gluten-free?

Most beer cheeses contain a small amount of all-purpose flour, but you could easily make this with your favorite gluten-free flour. There would be no difference in flavor or texture when using a 1:1 flour substitute. Some beers also contain gluten.

What does beer cheese taste like?

Beer cheese has a sharp, savory flavor with a hint of nuttiness from a mixture of cheddar and Gruyère cheeses. Mustard powder gives it a little bit of heat but don’t worry, it’s not a spicy dip!

Where did beer cheese originate?

In 2013, Clark County Kentucky was recognized as the birthplace of beer cheese. Back in the 1930s, Chef Joe Allman made this salty, spicy dip for his cousin Johnnie, who served it to increase customers’ appetites for beer…or so the story goes. Nothing makes you quite as thirsty as salt and spice!

Some find Kentucky beer cheese quite similar to Bavarian Obatzda, a spiced cheese spread made with Camembert and butter. Given America’s history, it wouldn’t be far-fetched to think that the dip made its way across the pond and took on a life of its own.

Beer cheese dip vs. beer cheese sauce

Beer cheese dip and beer cheese sauce contain the same ingredients, but the sauce is typically thinner and easier to drizzle over a large soft pretzel, nachos, or French fries.

Why is my beer cheese grainy?

One of the biggest mistakes when making beer cheese dip is cooking it over high heat, which will cause the milk to scorch and the proteins in the cheese to break down more quickly than the fat. To prevent this from happening, cook the dip over low heat and whisk in the cheese in batches.

How do you thicken beer cheese?

The best way to thicken beer cheese dip is with a roux, which is a mixture of equal parts softened or melted butter and flour. It’s the first step to making this dip but if you find that you need to add more, you can add an additional tablespoon each of softened butter and flour mixed together.

Can I serve beer cheese dip cold?

I wouldn’t recommend it. Beer cheese is meant to be served warm so you get those smooth and silky cheese pulls. As soon as the dip cools, it firms up and isn’t quite as creamy.

What beverages pair well with beer cheese dip?

It might sound obvious but you should absolutely serve this beer cheese dip with beer. I recommend something light and crisp such as an American lager or a sharp IPA to offset the rich, savory dip. It would also be great with hard apple cider or crisp and fruity white wines like Sauvignon Blanc or Riesling.

Ingredients

  • 1/4 cup unsalted butter

  • Melt the butter in a medium saucepan set over medium–low heat. Add the flour and whisk constantly until it forms a thick paste, about 1 minute.
  • Stir in the garlic powder, onion powder, mustard powder, Worcestershire sauce, and salt; cook for 30 seconds. Add the milk and beer and whisk until smooth. Cook, whisking often, until the mixture is thickened and a few bubbles break across the surface, 5 to 7 minutes.
  • Add about 1/3 of the cheddar and Gruyère cheeses; whisk until melted and fully incorporated, 1 to 2 minutes. Working in batches, repeat with the remaining cheese, whisking constantly until the mixture is thickened and creamy, about 5 minutes total Let cool slightly before serving.
  • Serve in a bowl with pretzels on the side for dipping.
